Korean style flower piping: When going against traditions is a new fashion


With a good combination of pastel colors and impromptu flower décor, Korean style cakes have become a hot trend on the market recently and stirred up conversations among online communities through pretty photos on Facebook, Instagram and other social media platforms.

So, what is the difference between the Korean style flower piping and the Vietnamese one?



It all began with an interesting story. In our long history of development, Vietnamese chefs have continuously been inventing new flower piping techniques, creating a Vietnamese style that features blooming flowers with curvy petals. Many years ago, all flower piping apprentices were told by their teacher that if they pipe a rose with closed petals like a cabbage then that is the “wrong technique.”

Also with a passion for cake decorating, however, Korean cake decorators choose to make flowers with closed petals like a “cabbage” – so called by some Vietnamese chefs. The technique is simple and easy, but still makes charming cakes that can attract the pickiest customers. Instead of using bright colors and the traditional décor style, a Korean-style chef would prefer to decorate a cake with flowers that look as real as possible.

Using dominantly pastel colors and topping to decorate a cake, the chef will arrange the flowers tightly like a garden or in a circle like a Laurel wreath. Without the use of chocolate, jam or fresh fruits, Korean style cakes still impress users by its well thought-out combination of colors and the sophisticated arrangement of flowers, buds and leaves—which makes the cake look like a magical garden!

Whipped Gold Label has a good overrun and thickness as well as excellent taste compared to butter cream. In terms of piping techniques, Korean flowers are very similar to Vietnamese flowers. The only difference is that the Korean petals are closed. The Korean leafs also look more natural: they are short and have two colors—often yellowish tints to represent old leafs. Dotted in between the flowers are little beads of cream symbolizing berry fruits or tiny flower buds.
