Rhum Blueberry Mousse and Tofu Raspberry Mousse - The trend of using healthy ingredients

Rich’s organized a class on Feb. 23, 2017 at Rich’s HCMC Customer Care Center on how to make Rhum Mousse and Tofu Mousse cakes as well as Ganache mirror cakes from Rich’s products, including: Fruit Fillings (blueberry and raspberry), Chocolate CompoundNeutral Mirror PectinVersatié and Niagara Farms.
 
Though the class started at 9.30 a.m., some participants showed up early at 8 a.m. Soon, the center was quickly filled up by nearly 30 participants. One of the older participants who showed up early was Mrs. Khuu Thi Thuan (from Tien Giang). She said she had to leave Tien Giang at 5 a.m to catch the bus to attend the class on time. She expressed the eagerness for the applications that she was to learn and apply to her family-owned bakery.
 
Talking voices stopped when the class began. All eyes were on the counter where Rich’s technical sales representative Ms. Ong Kim Oanh introduced the recipes of the day. Despite the fact that this was her first class since she had joined Rich’s, with her many years’ experience in the industry and thorough preparation, she confidently demonstrated two recipes of Rhum Raisin Blueberry Mousse and Tofu Raspberry Mousse in front of numerous class participants.

Ms. Oanh shared: “I really like these two cakes because the Rhum’s flavor combined with the fresh taste from Rich’s fruit filling will create a light and pleasant aroma. Besides, I think the ingredients are very good for your health such as tofu, raisin, blueberry and raspberry. Those are very healthy!”
 
Indeed, fresh fruits are a good source of vitamins that help to improve the immune system; reduce chances of diseases; enhance the user’s skin, health and mind. Always keeping up with new trends and constantly innovating, Rich's developed the two applications of Rhum Mousse and Tofu Mousse from Rich’s Blueberry and Raspberry Fillings. In such premium products, the user can see pieces of real fruits mingled in the jam, bringing the naturally delicious flavor and eye-catching colors, making them different from the low-end fruit fillings on the market. Mousse cakes now are not only tasty but also irresistible thanks to these upscale and healthy ingredients.
 
Furthermore, it would be a mistake not to mention the rich and creamy flavor of Rich’s Niagara Farms as well as the smooth texture created by Rich’s Versatié. All those luscious features mixed well together and definitely won the hearts of most demanding cake lovers.
 
Ms. Oanh highlighted that although the price for a mousse cake is usually higher than decoration cakes, she did her research and developed these two mousse cake recipes with careful calculations of the production cost to help the customers achieve the best quality at reasonable prices compared to other mousse cake recipes on the market.
 
One of the noticeable things is that a Mousse cake can be stored in the freezer from 1 week to 10 days. When being displayed, it can last in the cooler for 3-4 days. If bakeries can take advantage of this feature and make a large number of Mousse cakes in one batch, it would be very economical and time-saving.

Not only demonstrating how to make 20cm-diameter Mousse cakes, Ms. Oanh also prepared Mousse cakes in small cups.
 
She said: “I want to show people various ways to display a cake. Sometimes, a large cake can be difficult to sell because people prefer having just a piece of it. Then in this case, the operator can prepare the mousse in small cups like this to keep up the consumption rate in small units.”
 
At Ms. Oanh’s workshop, while sampling the two types of Mousse cakes, participants were also introduced to the application of Mexican buns made with Rich’s Muffin MixCrumb Softener, Versatié and Chocolate Compound. Especially, this application received high interest from the participants due to its tasty flavor and soft texture.
 
Ms. Oanh revealed: “Thanks to Rich’s Crumb Softener, all breads and buns become softer than ever. Therefore, our Mexican buns are not dried but instead moister and fresher”. One surprising thing is that the recipe for Mexican buns is not difficult at all. Below is the tutorial of baking Mexico buns demonstrated by Rich’s Technical representative, Ms. Ong Kim Oanh.  

 


Finally, Mr. Nguyen Khac Huy, Rich’s technical sales representative, demonstrated how to make ganache mirror cakeswith Rich’s Chocolate Compound and Neutral Mirror Pectin (glaze). 
 
The combination between the deliciously rich and distinctive flavor of Rich’s Chocolate Compound and the fresh, glossy look of Rich’s glaze made ganache mirror cakes a hot topic for many participants. Ms. Tran Thi Thu Hieu, a customer from Binh Chanh, expressed that she was interested in the application of ganache mirror cake because of its beautiful mirrored cover, which is a hot trend on the market. The tenderness of chocolate flavor was also among participants’ favorite features of this cake.

At the end of the workshop, all participants expressed their satisfaction with the knowledge they gained today. Ms. Khuu Thi Thuan (Tien Giang) cheerfully told us: “I am looking forward to joining Rich’s upcoming classes because these were practical, easy to follow and up-to-date with the market’s trends”.
